WIAW: Another back-on-track edition


Another Wednesday, another What I Ate Wednesday post’s coming at you. As always, thanks to the lovely Jenn at Peas and Crayons for hosting the party.

In case you couldn’t tell by the title of this post, I blew it over the weekend. Again. I really need to curb the weekend free-for-alls, which tend to extend through Monday. I’ll never make any progress that way.

By Tuesday, however, I was back to eating well and logging what I ate into the Lose It! app. They can’t make it much simpler; I just need to track every day, rather than just the days I’m eating the right kinds of foods.

But that’s a problem for a different day. Let’s get on to the eats.

After forgetting to set my alarm, I finally woke up after 10. First things first: I logged a 25-minute walk, then spent some kitchen time chopping veggies for the big ol’ salad that’ll make its appearance later in the post.

Ham and Cheese Croissant

With dinner in the bag, I headed to Starbucks with the intention to try one of the new La Boulange pastries making their debut. Since everything looked good, I carried on quite the debate. The winner: A ham-and-cheese croissant. It didn’t look like I expected it to, but it tasted out-of-this-world. The dough was flaky, buttery perfection … and the cheese/ham center had just the right amount ooey-gooey goodness. Even better? The nutrition profile: 330 calories, 16 g fat, 31 g carbs, 1 g fiber and 15 g protein.

A clear winner in my book! Note the almond milk latte in the background. I brought 8 ounces of unsweetened almond milk, doctored with sugar-free coconut and mocha syrups, from home and added a grande iced coffee (black) to the glass.

When it was time to head to work, I cashed in my Treat Receipt for a $2 grande drink. I got a Mocha Cookie Crumble Frappuccino Light (no whip this time) — but I forgot to snap a picture before I slurped it down. Oops.

Granola Bar Snack

When I got to work, I grabbed these Nature Valley Oats & Honey granola bars from the vending machine. I was hungry enough that I knew I wouldn’t be able to get through the afternoon without a snack, and granola bars seemed like the lesser of the evils.

At around 6:30, I broke out dinner — my attempt at making a Big A$$ Salad that looks as good as the ones in my Instagram feed.

Taking a cue from Julie at PB Fingers, who recently sang the praises of chopped salads, I made myself the biggest chopped salad known to man. In the mix: spinach, lettuce and bagged cole slaw, red bell pepper, tomato, onion, ham, a hard-boiled egg and half an avocado.

I took it a step further by making my own dressing, too. Homemade creamy honey-mustard dressing included 2 oz. fat-free Greek yogurt, 1 teaspoon olive oil, 1 teaspoon spicy brown mustard, 1 teaspoon honey and 2 teaspoons water.

The result:

Yum! It was so worth the trouble of all that chopping. And so filling … I see more homemade gigantic salads in my future. That has to be a good thing, right?

A couple hours after dinner, I did have a Detour peanut butter bar (not photographed). (I owe y’all a post on Detour. Don’t let me forget.)

This time, my quest to get to sleep earlier was hampered by the day (night) job. We’re usually finished by 11, but tonight it was after midnight before I walked out the door — and I had to run to the store to pick up the ingredients for the watermelon smoothie I’m going to try for breakfast.

The sooner I get to sleep, the sooner I can have breakfast, right?
