Late to the party

pin-it-partyWhat happens when you set aside Lindsay’s Bean Bytes so you have time to click at your leisure? You miss out on the invitation to her Pinterest party.

The gist: Share five of your favorite, pinnable posts, and visit at least three of the other participants’ posts to pin something you like. It’s a super idea, and as soon as I get my computer back, I’ll be checking out more of everyone’s links.

Sadly, my computer may not be back as quickly as I thought. Remember the amazing restarting computer? When I got it down to Sedona Thursday morning, it wouldn’t start up at all.

Not good. Not good at all. And they didn’t get a chance to check it out Thursday before they closed, so I still don’t know what’s wrong or how much it’ll cost to fix. I hate not knowing.

Lucky for me, late attendees are welcome to Lindsay’s bash. Maybe you can call me fashionably late?

My five pinnable posts:

PineappleSmoothie

Pineapple Upside Down Cake Smoothie. This is one of my favorite smoothies — I make it at least once a week.

Listen

I have a new rallying cry. This is my response to an excellent post from Theodora. It spoke to me so much that I made myself a sign featuring one of her quotes. Some days I do better at heeding the words than others, but I’m trying.

ZestyZucchiniFriesI love zucchini in all its various incarnations. During my Atkins days, I created these  Zesty zucchini fries. They’re both delicious and relatively healthy. And the post has step-by-step photos.

ButterCookies

My favorite holiday cookies. Recipes for my Mom’s butter cookies (which she was proud to say was the same as Kelly Ripa’s) and Mexican Wedding Cakes. The Leg Lamp cookie cutter was a new addition last Christmas. Normally I just make trees, snowmen and stars.

BroccoliCrunch

Broccoli Crunch Salad. Another holdover from my Atkins days, this recipe is one of my all-time favorites. It contains just a few simple ingredients, but has so much flavor. I’ve made it low-carb — with full-fat mayo and cheddar — and lower-fat with reduced-fat mayo and 2 percent milk cheese. The only constant is the bacon. (No, I never subbed in turkey bacon. Never gonna happen. I don’t do turkey bacon.)
