The folks at Healthy Living Blogs host a weekly recipe link-up. This week, they’re asking for your favorite way to use a tortilla.
It may not be all that original, but my favorite tortilla recipe uses the tortilla as the base for a pizza.*
The basic ingredients:
1 tortilla (I like the large whole wheat low-carb tortillas that have just 2 WW Points)
1 to 2 Tablespoons tomato paste, depending on tortilla size
1/8 to 1/4 cup mozzarella
To that base, you can add whatever toppings you like. Some of my go-tos are 2 oz. chopped ham, sliced mushrooms, sliced bell peppers, sliced onions, mini pepperoni, zucchini, chopped spinach …
In the mood for Mexican? Try a base of refried beans or salsa and use cheddar cheese instead of mozzarella.
Have leftover pulled pork or chicken? Use a barbecue sauce base and top with your fave veggies and cheese.
The only real limit is your imagination — and that’s why I love using the tortilla in a pizza.
*Depending on the tortilla used and topping amounts, a finished pizza will weigh in at anywhere from 5 to 8 WW Points.
