Recipe: Zesty Zucchini Fries

Remember that zucchini fries recipe I mentioned last week? I’m finally getting around to writing it up.

I’ll warn you now: These are seriously delicious. I chowed down on the entire plateful in mere minutes.

They couldn’t be much simpler to make, either.

The ingredients:

  • 2 zucchini
  • 2 T spicy brown mustard
  • 2 T olive oil
  • 1 cup ground almonds
  • Salt and pepper to taste

Preheat oven to 350 degrees F. Cut zucchini into equal-sized spears.

Cut zucchini into spears.

Mix oil and mustard. Add to zucchini and toss well to coat.

Coat with mustard/olive oil.

Put almonds, salt and pepper in Ziploc bag. Shake to mix, then add zucchini spears. Shake well (a good way to get a little extra exercise, no?).

Shake in bag to coat with almond crumbs.

Spead fries in single layer on a baking sheet (covered with parchment paper, if desired). Bake for 30 minutes, turning halfway through.

Ready to eat? I think they need to be baked, first.

They’re delicious — and even more so served with homemade olive oil mayo mixed with a squirt of spicy brown mustard for dipping. (That’s what the yellowish blob on my plate is.)
