Now that I’m firmly entrenched in a low-carb lifestyle, I rarely crave pasta. But on days when nothing’s going my way, I still long for the comfort you can find in food.
Here’s the cravings-buster I came up with to chase thoughts of a big bowl of ooey-goey mac & cheese right out of my head.
In the mix (carb counts in parentheses):
- 1 bag tofu shirataki noodles (2)
- 1 cup spinach, chopped (0.2)
- 1 Tablespoon butter (0)
- 2 Tablespoons heavy cream (0.8)
- 1 oz. garlic cheddar, shredded (1)
- 1 oz. sharp cheddar, shredded (0.4)
Prepare noodles according to directions, adding the spinach while cooking. Meanwhile, melt butter in small saucepan. Add cream, then stir in cheeses. Stir continuously until cheese is melted. Remove from heat. Top prepared noodles with cheese sauce and enjoy.
The recipe makes a gigantic bowl of cheesy goodness with just 4.4 grams of Net Carbs. (Don’t ask about calories or fat; I haven’t entered the recipe into a nutrition calculator to figure those out. The noodles only have about 40 calories, but cheese, butter and cream aren’t exactly low-cal.)
