Roasted veggies rule

I’m sure everyone else has already discovered this fact, but I love the flavor of roasted veggies.

The roasted brussels sprouts I had a few weeks ago were delicious. And this week, I roasted up two bunches of asparagus.

With asparagus so cheap, I couldn’t resist buying two bunches.

With them on sale at Safeway for 99 cents, I couldn’t resist. I whipped up an entire baking sheet full, drizzling the spears with a tablespoon of EVOO and seasoning with sea salt and fresh ground pepper.

The only reason they’re not already gone is that I roasted them Wednesday morning and the flu struck Wednesday afternoon. I carried the same eight spears to work for two nights (with the fixin’s for a pork taco, which also went uneaten).

I’ll be remedying that problem soon.
