Recipe: Avocado-Cottage Cheese Dip

When a friend suggested I eat raw garlic to help ward off my sore throat, I thought she was a little nuts. I mean, I love garlic … but enough to eat it raw? Not so much.

After a little thought, I came up with this recipe. It might not have kept the cold away, but it tastes delicious. Even better, it was a pretty green color, making for a festive Christmas Eve snack.

  • 1 teaspoon olive oil
  • 2 Tablespoons onion
  • 1 avocado
  • 1 cup cottage cheese
  • 2 cloves garlic, minced

Caramelize onions in oil. Put avocado, cottage cheese and garlic in food processor and blend until smooth. Fold in onions. Serve immediately or let flavors blend. (I think it tasted better the next day, even if it was a little less green.)
