Impromptu recipe: Greek Yogurt Dip

The other night, I was fooling around on Twitter and came across a tweet from Popchips, asking “if #popchips was batman, who would be our robin?”

An answer came to me immediately.

You can see the folks at Popchips were intrigued. Problem was, I didn’t have a recipe …

So I made one up on the fly, basing it on a yogurt dip recipe I remembered from my short-lived “Carb Lovers Diet” days.

Here it is, in all its impromptu glory, for those who expressed interest:

  • 1/4 cup onion
  • 1 clove garlic
  • 1 teaspoon EVOO
  • 1/2 cup plain Greek yogurt
  • 1 Tablespoon chopped fresh chives

Caramelize onion, garlic in oil; let cool. Stir into yogurt and add fresh chives. Let flavors meld for at least an hour.


Serves 1 or 2, but you could easily double or triple it if you’re taking it to a party.

Per serving (based on 2 servings, as calculated at Sparkpeople): 55 calories, 2.3 g fat, 20.5 mg sodium, 3.9 g carb, 0.5 g fiber (3.4 Net Carb), 5.3 g protein.

P.S.: I’d totally eat this dip — and probably could, with the right veggies instead of delicious Popchips, when I start eating a few more carbs each day.
