Low-carb recipe: Meatloaf

This meatloaf recipe tastes great — and it’s Boyfriend-approved. He actually wanted to split an extra piece and tried to tell me he was eating all the leftovers.

Net carb count of each ingredient is listed in parentheses.

2 pounds ground beef (0)

1 1/2 cups chopped mushrooms (3.3)

1/2 cup cheddar (0.8)

1/4 cup scallions (1.2)

2 eggs (1.2)

1/4 cup heavy cream (1.6)

Garlic salt, pepper to taste

1/2 cup Hunt’s tomato sauce (6) seasoned with a little garlic salt

Mix together everything but tomato sauce. Form into loaf and bake for about 45 minutes at 375 degrees F. Spread sauce over the top and bake an additional 10 minutes.

Slice and serve.

The entire recipe has 14.1 Net Carbs. I cut mine into 8 slices, making each one have a count of 1.8 (rounded up).

I ended up eating 2 1/2 slices, making that part of my dinner 4.5 Net Carbs. I also had some snap peas (3) and blue cheese dressing (1), so total carb consumption was 8.5. Not too shabby.
