Today’s lunch was an old favorite I haven’t had in too long: Smothered Chicken.
My roommate and I found the recipe while doing Atkins the first time — and it’s so simple we wondered why we didn’t think of it.
You just sprinkle a chicken breast with garlic powder and bake it until cooked through. Then top it with 1/4 cup of cheddar cheese, a slice of crisp bacon (crumbled), and 2 T green onion. Bake another 5 minutes, until the cheese melts, and serve topped with 2 T sour cream.
See? Super simple — and stupendously delicious.
When the Boyfriend wanted lunch before I left for work, that’s what I whipped up. I forgot how tasty it was — but now I think I’ll put it back in my regular rotation.
