False gain or not, the scale provided the nudge I needed to get back into the kitchen today. I do not want to see 2 pounds added to my weight — and I know cooking for myself is better than eating out.
Breakfast, lunch and dinner all came from home today — and two of the three were brand-new-to-me recipes.
For breakfast, I tried the Blueberrry Oat Pancakes with Maple Yogurt. They were a big hit with the “Today” show crew, so I wanted to work them into my week’s worth of menus. What better day to do so than a lazy Labor Day?
I cheated just a little. Because I was too cheap to buy real maple syrup, I used the sugar-free maple-flavored syrup already in the pantry to flavor my yogurt. Even with that substitution, I liked the pancakes.
Lunch was one of my favorites, the Black Bean and Zucchini Quesadillas. I could probably have these every day and not get sick of them.
For dinner, I took a serving of the Mediterranean Pasta Salad I whipped up after breakfast but before lunch to work with me. The pictures turned out a little fuzzy again (I think I was too close to the bowl), but the pasta salad was really good. The lemon-EVOO dressing was flavorful — and I even liked the chopped artichoke hearts. (I did not know I was an artichoke fan.)
Good thing, too, since I have three more servings. (At least I hope I do. The recipe said it made four 2-cup servings.)
In the interest of full disclosure, I also stopped at Starbucks on my way to work. I got a Pumpkin Spice Frappuccino Light. OK, the pumpkin spice syrup is in no way, shape or form light … but I did get one less pump than they normally put in. I also had it made with skim milk and skipped the whipped cream.
It was pretty darn delicious – but I’d have to say I like the Coconut Mocha one better. (If Pumpkin Spice is delicious, Coconut Mocha is to die for!)
